Hey ladies,
I know I have been blessed to be friends with some wonderful cooks out there! I could use some help. I am going to work on getting my freezer stocked with meals before the new baby comes. I'm only 27 weeks so there is definitely still time but I know I may not feel like doing much extra those last few weeks of pregnancy. Would you mind sharing recipes that are good frozen? Or it doesn't even have to be the whole recipes but types of food that freeze well would be great. Thanks - I appreciate it!

I think chili, spaghetti sauce and any types of soup are always better once frozen and thawed. You know - let's all the flavors infuse together for longer? And all of those are super easy to make, usually fairly inexpensive, and really easy to thaw in a pinch!

Kasi - thanks. I'd love a good spaghetti sauce recipe. Also, what types of soups are your favorite to freeze? How long can you leave it a meal frozen and it still be good? Thanks!

When we had our first, someone brought us frozen chicken fettuccine. It was great!
Crystal .. I was going to leave a link to tammysrecipes, but I see that Katie beat me to it. When she had her third baby, I remember her doing some posts on things that she prepared beforehand that weren't the full meals. She has a basic meat/onion/bell peppers mix that she cooked and sealed with a food sealer .. then she uses that meat for things like tacos, spaghetti, chili, whatever. Also .. she mixed and bagged up the dry portion of different things that she bakes regularly .. like corn bread and whatnot. I really liked this method of preparing food ahead, as opposed to making entire meals (casseroles and whatnot). Anyway .. Tammy just had her fourth baby, and I think this time she prepared more fully prepared meals ahead of time.

i like to double meatloaf when I make it and freeze one. it works great.
Have you heard of the cookbooks "Don't Panic! Dinner's in the Freezer" and the 2nd one is "More DP! DitF". They are all about meals that you make 2x to 6x the amount needed for a meal and then freeze. They are not all casseroles. And lots of them are made up to a point then you freeze and then there are directions to finish the recipe on thawing day. A lot of the recipes will make you feel like a gourmet cook!!

I think any type of chili, spaghetti sauce or soup recipe is always better after it's been frozen and then thawed. I usually will use mine within a month or two after it's initially frozen.
